Fabulous Fruit Muffins
I love muffins!
It really doesn't matter to me what kind they are, I love them warm with melted butter..yumm!!!
These muffins are super fun and easy to make, and can be personalized very easily. I made this batch using blue berries, but I have also had them with mixed berries, and they were very good. Adding some walnuts or pecans in the mix would be good too!
1 ¼ C flour
¼ C sugar
1 tsp. baking powder
½ tsp. baking soda
¾ C low-fat buttermilk
2 TBSP margarine {melted}
1 egg {slightly beaten}
½ tsp. vanilla extract *
1 C frozen berries {coarsely chopped}
Nonstick spray or cupcake liners

I don't get to use the muffin pan often, I had to dig around to find muffin cups, lol Pre-heat oven to 400.

Spray muffin tin with nonstick spray or line with cupcake liners
In a large bowl, combine flour, sugar, baking powder and baking soda.
Stir well until all ingredients are blended.

In a second bowl, combine buttermilk, margarine, egg and vanilla.
Pour this mixture into the dry ingredients.
Using a large spoon, gently stir ingredients just until moist {do not over mix}.
Add fruit and stir gently {do not over-mix}
{sorry I forgot to get photo's of the 4 above steps}
Spoon batter evenly into 9 muffin cups {I got 11 from my mix}

Bake 20-25 minutes or until golden brown

Serve hot or cold; muffins may be frozen for later use.
*you can personalize these muffins by using different extract flavors too! Peppermint, raspberry, orange or hazel nut would be super good!
