Mexican Beans

My 'Mexican Beans' are super simple, but pack a lot of flavor and punch!
dry pinto beans
bacon
onion
bell and/or jalapeno pepper
salt, pepper
chili powder
cayenne
garlic powder
water
1 C of Mamma G's Homemade Salsa
I use my mother-in-laws cast iron stew pot to cook beans in; there is just something about that old cast iron....wooo!
First thing I do is let the cast iron warm up on medium-high heat. I toss in a few slices of bacon and let them cook! I know it's not popular, and I know it's not healthy, but it's GOOD!! Let that bacon cook and make grease!!
Next I pour my dry beans into the large strainer and rinse them off.
While my bacon is cooking, I slice up an onion and bell and/or jalapeno pepper.
When I feel like I have enough grease, I scoot the pot off the flame for a moment, add my dry beans, seasonings, veggies, salsa and fill the pot up with water.
I cook the beans on med to med-high heat until they are tender, usually about 3 hours.
These beans are great in soups, with Mexican dishes {instead of canned re-fried} and can stand alone in a bowl all by themselves! They also make super yummy hummus!

  2. I love beans, but I omit the really spicy bits. I cook mine in my crockpot now, and the smell fills the house all day. :) I love also that you add bacon!

  3. I never seen even Mexican beans. Are they look alike the beans that we eats. But sounds great as I love beans veg.

    1. Hi there Minakshi! Thanks for stopping by, Mexican beans are just pinto beans that I usually add onions, peppers, spicy seasonings and sometimes salsa to while I cook them. I gave them that name because they are usually spicy!
