Grilled Chicken Fajitas

As you know, my family and I love chicken fajitas! In fact, this has to be mine and our son's all-time favorite home cooked meal.
It's so simple, and can be made super easy and simple, or you can go all out and make it something to write home about! Regardless, if you are counting calories, this dish is pretty low cal and packed with a lot of flavor!!
There are four of us in our home, usually when I make this meal, I do one chicken breast per person, plus one, so, I normally cook 5 chicken breasts when I make this meal for the four of us.
Chicken breasts
onions
bell pepper
jalapenos
tomatoes
salt, pepper
garlic powder
chili powder
cayenne pepper
salsa
tostada shells, flour/corn tortillas/taco shells
Mexican beans

I put my beans on early this afternoon for my Mexican beans.
When I got ready to prepare dinner, I gathered everything I'd need

I then put 5 chicken breasts in the microwave on thaw for a few minutes while I cut up some onions, bell pepper, jalapenos and tomatoes for grilling and homemade *almost* pico



After my chicken thawed a little, I sliced each breast into fajita sized strips

Everyone around here likes their chicken seasoned differently.
For our 6-year-old, I put a little salt and garlic powder on her strips; I always grill them first so none of the seasonings from the other strips or oils from the veggies get absorbed into her chicken.
My husband and our son like it warm, and I like'em hot, hot, hot! The only thing I do different between theirs and mine is I add cayenne pepper to mine, and cook it last.

So after I grilled our 6-year-olds chicken I threw the veggies on the grill.

Speaking of grill, did I tell you about my griddle 'grill' from Wal Mart that I love?!?!

I wanted one of these for years! Finally eariler this year, I got one, and I love it!! It was very inexpensive, it's fun and easy to use and clean up; I don't know why I waited so long to get one!
I guess you could say I got mine for free; I saved up the money on my Wal Mart Savings Catcher and purchased it that way. I have also purchased a mixer using my Wal Mart Savings Catcher!
Back to the recipe!
My husbands and sons chicken went on the grill after I pulled the veggies off, when theirs was done, I threw mine on the grill.

I usually make a tostada with my chicken; fewer calories! I put down a few mexican beans, a little chicken, some *almost* pico, a little shredded cheeese and a little salsa!
Regardless of how you eat it, this chicken and grilled veggies is super yummy and fresh!
There is more prep work involved in this meal than anything; but it is totally worth it!

And there it is, THE griddle; my favorite thing to use for cooking, next to my crockpot ... if you don't have one, you really should get one, you'll be super glad you did!!!
