Beef Tips and Noodles with Diced Tomatoes

Look! I cooked beef instead of chicken!
While chicken is my choice for protein, I treat my family from time to time with beef. These little steaks were really good, and I got them on sale from my local mom-and-pop grocery store. I like them because they are super thin and already cut in half!
2 thin flank steak halves
2 pkgs. Ramen noodles {1 beef flavor packet}
2 C. clear, homemade chicken broth
1 14.5 oz. can diced tomatoes
garlic powder
black pepper
salt

I used my electric skillet for this meal. The first thing I did was put a little oil in the skillet and turned the heat on to about 350, and got out everything I needed to prepare this meal.

I sliced the steak halves into strips then cut them into bite-sized pieces and tossed them into the hot skillet where I let them cook until they had a nice, dark brown color to them.


While the meat was cooking I broke the noodles up in both packages.
When the meat was to my desired color, I drained off the access grease then poured the chicken broth in my pan and added both packages of noodles. I used 1 beef flavor packet from the noodles and saved the other one for another time; I then added a little salt, pepper and garlic powder. I made sure the heat was still up around 350 on the electric skillet, put the lid on it, and let it cook.

It didn’t take long for everything to come to a boil, I let it boil a couple of minutes, gave it a quick stir and turned the heat down to around 225.
It took about 10 minutes or so for the liquid to be absorbed; then it was done!
I served green beans and mashed potatoes {for the 6-year-old} with it. I think bell pepper slices would have been super yummy mixed in with this; it was still really good. We had enough left over for our 18-year-old son to have a midnight snack!

My electric skillet is one of my favorite cooking utensils. Before I got a crock pot I used it pretty much the same way I use the crock pot; and it is amazing for making our super-duper breakfast mix! What I like most about the electric skillet is that I can cook a whole meal in it and it doesn’t heat up my kitchen like a full-size stove, or even as much as the crock pot does, and it’s very easy to clean up!
Electric skillets come in all price ranges, you can get them as low as $10.00 at Wal Mart; if you don’t have one, you should check them out, they also make great gifts!

  2. Yum yum yum! I love meals like these that just seam to please everyone. Plus I love how you can use leftovers in them. :)
    I haven't had an electric skillet in so long. Now I use my cast iron frying pans or my crockpot. I love how there are so many different tools to choose from.
