Glazed Carrots
I made glazed carrots this morning. I will confess, I do not like cooked carrots; so this was my first time to make them. I used the recipe from my grandmother's 1968 edition Better Homes and Gardens annual cookbook.
The original recipe only makes a very small amount of glaze, and I made this for a church dinner, so, I doubled the recipe 4 times ...
1/3 C brown sugar
2 TBSP butter
4 whole carrots
I added ...
Pecan halves
All-Spice
My first substitution is that I used canned carrots. The first thing I did was open four cans of sliced carrots, drained them and rinsed them off.
First time through of making the glaze I followed the recipe to a "T"; that wasn't much glaze, so I poured it into my empty crockpot to coat the bottom. After doubling the recipe, I poured about 1/3 of my carrots into the crockpot and topped them off with the hot glaze. I did this two more times, then made one more batch of the glaze, doubled, and poured it over the top of the carrots and stirred it all together.
I put my crockpot on low heat to keep the glaze from getting hard, and looked at the carrots, they looked a bit bland; so I added about 1/2 a C of pecan halves that we gathered from our yard, and sprinkled a little All-Spice over the top; mixed everything well and ta-da...I was done!
No one in my family likes cooked carrots, the only reason I had canned carrots was to use in soups when I am out of fresh carrots; but; my son was a good sport and tried one sliced carrot, and said they were really good!


*Update - everyone who tried my glazed carrots said they were really good! I was told they tasted like sweet potatoes! Very, very happy everyone liked them!
