Chicken Parmesan Stuffed Peppers I don't normally post recipes or recipe reviews on this blog, but, because I got behind over the weekend, and am working on catching up on three days of organization and blog learning not to mention all the other things that were put aside over the weekend, I thought I'd throw this one out there.
So, this past weekend has been run, run, run!
I ended up having to go out of town TWICE!
Same trip both times. This trip, 120 miles one way, should only take 2 1/2 hours to drive. Friday evening when I drove down there, I decided to take a new route, a 'short cut' if you will ... well, it was ANYTHING but a short cut. We sat on a highway for 2 hours in traffic, 2 hours to go 30 miles! That trip was 9 hours long, we left at 3:30 Friday afternoon and got home at 12:30 Saturday morning. It was a horrible trip, besides the traffic, a guy decided to take road rage out on me and tried to run me off the road {two-lane black-top state highway} and then proceeded with blinding me, twice, by flashing his bright lights in my mirrors. I was never so happy to get home in my life!
Then I had to turn right around Sunday morning and make the same trip ..it was a better trip Sunday except when we drove back up here the wind was so high, anyone driving southbound could have put a sail on their car, stuck it in neutral and gone 100 miles in 15 minutes, lol.
When I got home Sunday afternoon my sweet family surprised me with a clean house, a card everyone signed and a hand-written note inside it from my husband, a dozen beautiful roses and some very comphy new pajamas! My family is so sweet!

Anyhow, now for the reason for this post.
We tried a new recipe last night, Chicken Parmesan Stuffed Peppers.

Honestly, I didn't eat, by the time I was done making dinner and cleaning up the dishes and all from preparing it, I didn't feel hungry anymore, however, my husband and adult children BRAGGED on this meal, even our son who does NOT like stuffed peppers said it was super good!
I did tweak or change a couple of things from the recipe.
The recipe called for parsley and red pepper flakes, neither of which I had, so I used cilantro and a little bit of jalapeno that I diced up. I also made my own chicken broth one day last week when I was boiling chicken for a couple of other recipes.
