At our house, the Christmas menu ranks close to the top in order of importance! We have both a traditional meal, and a not-so traditional meal.
My mom loves ham, and all the traditional sides that go with it. Give me a good pork roast, sausage or bacon any day, but I’ve never really cared for ham.
I remember when I was a little girl the whole family would gather at grandma’s house on Christmas eve for dinner and gifts. I was always so amazed at how hard my grandmother worked preparing the food for us all, she would be in the kitchen all day and never complain – she’d make her famous “Sunday” steak, or a ham, mashed potatoes, green beans, fried okra, sweet potatoes, corn, pea salad, gravy, rolls, and several different pies, divinity and a cake. She always made a cake. Meals at her house were always so special to me, she put a lot of love in her meals.
To make Christmas meal special for my mom, I prepare mom’s ‘traditional’ meal of bone-in-sugar-glazed-ham, mashed potatoes, sweet potatoes, green beans or green bean casserole, pea salad, gravy and rolls for Christmas eve. We usually eat this meal for dinner.
Of course, we must have something to feed this food-loving group to help them muster through the afternoon of heavenly smells coming from the kitchen! I like making a veggie platter to help tide over those hearty appetites.
This year our platter will be sporting broccoli, cauliflower, cherry tomatoes, celery, baby carrots, whole-pickled jalapenos, and radishes. My husband has requested French onion dip and ranch dip; and our oldest daughter promised she’d bring 3 or 4 flavors of her homemade hummus!!
Since our kids were little, one thing we always have on our Christmas day breakfast menu are orange rolls; I LOVE those!!! The past few years I’ve added our “traditional” breakfast mix of sausage, potatoes, eggs, cheese, onions and peppers; I’ve even put it in the crock-pot over-night, to go along with the orange rolls, but this year I am going to make a super yummy oven-baked Spanish omelet and pancakes.
For lunch on Christmas day we have Christmas eve dinner left-overs, and, a second round of the amazing veggie platter!
Christmas day dinner is mine and my family’s favorite. I serve homemade chicken enchiladas in homemade sour cream sauce, my Mexican beans, fried rice {I know, it’s not Mexican food, but we love it with Mexican food!}, homemade salsa, homemade guacamole, and store-bought tamales covered in homemade chili sauce.
For dessert this year we are having a cherry pie {my dads favorite}, a strawberry rhubarb pie, sugar cookies, I’m not sure what they are called, these bars, my mom used to make them, they have a graham cracker crust, then you put eagle brand milk on top of the crust, then coconut flakes, and top it off with chocolate chips ….my dad and I LOVE these things, it wouldn’t be Christmas without them!
So, that is pretty much our Christmas menu; a lot of food, and a lot of work, and a lot of love put into each bowl, stir, pot and pan.
